Recipe: Chocolate Protein Pudding

Chocolate Protein Pudding: This is one of my favourite snacks for refuelling after a long run. It only takes a few minutes to make, and contains around 300 Calories.

You will need:

1 Ripe Banana

1 Egg

2 Tablespoons Shredded Coconut

1 Scoop Chocolate Protein Powder

2 Tablespoons Unsweetened Cocoa Powder

Mash the banana in a bowl, and mix in a lightly beaten egg, protein powder, cocoa and coconut. Alternatively you can whizz it all up in a blender, if you can be bothered, but the washing up will take longer than the pudding takes to prepare. Next, transfer the mixture into a bowl, dish, or silicone mould. Microwave for approximately 3 minutes, until the pudding has risen.

That’s it. Yummy, healthy ‘chocolate pudding’ in under 5 minutes, with a good blend of carbs and protein, to help replenish your body after a long run. Enjoy!
